Thai sticky rice with mango

Ingredients

Preparation

  1. soak 1 cup of glutinous rice with 1 cup of water for 20-30 minutes

Procedure

  1. add 1/2 cup of water, 1/2 can coconut milk, salt, 1 tablespoon brown sugar
  2. stir
  3. bring to gentle boil, partly cover with lid, reduce heat to medium low - gentle simmer
  4. simmer for 20-30 minutes until water is absorbed
  5. turn off and close lid, sit for 5-10 minutes
  6. warm rest of coconut milk (no boil) ~5 minutes, add brown sugar if required
  7. cut mangoes into cubes
