Best Steak - reverse sear

Ingredients

  • Steak - eye fillet, scotch fillet or rib eye - at least 3cm thick
  • Salt
  • Pepper
  • Bacon
  • Garlic

Preparation

  1. get steak to room temperature
  2. moderately season steak with peper and salt
  3. preheat oven to 125C (fan forced)

Procedure

  1. cook the steak in the oven (best on a grate) for 11 (3cm) to 16 (5cm) minutes
  2. remove from oven and let rest for few minutes
  3. heat a frying pan to VERY HOT with olive oil (until smoking)
  4. throw steak , then garlic and bacon slices in pan , 1 minute each side or until nice brown
  5. let steak rest on plate for 4 minutes then serve
  6. BONUS: put the juice back to pan, add red wine and bit of soy sauce, reduce and pour jus in a bowl
