Best Steak - reverse sear
Ingredients
- Steak - eye fillet, scotch fillet or rib eye - at least 3cm thick
- Salt
- Pepper
- Bacon
- Garlic
Preparation
- get steak to room temperature
- moderately season steak with peper and salt
- preheat oven to 125C (fan forced)
Procedure
- cook the steak in the oven (best on a grate) for 11 (3cm) to 16 (5cm) minutes
- remove from oven and let rest for few minutes
- heat a frying pan to VERY HOT with olive oil (until smoking)
- throw steak , then garlic and bacon slices in pan , 1 minute each side or until nice brown
- let steak rest on plate for 4 minutes then serve
- BONUS: put the juice back to pan, add red wine and bit of soy sauce, reduce and pour jus in a bowl
