Creme Brulee

Ingredients

  • 6 eggs yolks
  • 100gr sugar (1/2 cup)
  • 7gr vanilla extract (1+1/2 teaspoon)
  • 500 gr 35% fat thickened cream (2 cups)

Preparation

  1. preheat oven at 150C fan forced
  2. in a bowl, mix 6 egg yolks + 100gr sugar + 7gr vanilla extract until thick and creamy
  3. heat 500gr of thickened cream on low heat until you see first bubbles on the edges
  4. boil water in a kettle

Procedure

  1. add the cream little at a time to the previous mix , stirring continuously
  2. slowly pour the content of the bowl into 4 ramokens to around 3/4
  3. put all ramokens into a deep tray and place in the oven
  4. pour boiling water around ramokens to around 2/3
  5. bake for 35 minutes
  6. test wobbliness (it should be just little bit wobbly)
  7. let cool and refrigerate for either 2 hours or preferably overnight (gladwrapped)
  8. finally, spread 1 teaspoon of sugar and heat with gas torch until caramelised
  9. rest for 5 minutes before serving
