Hungarian Perkelt (Paprika Chicken)

Ingredients

  • 1kg chicken thigh fillet
  • 2 big onions
  • 1 green capsicum
  • ground hungarian paprika (not spicy)
  • half a small cup of full cream (47%)

Preparation

  1. thaw chicken to room temperature (can be cold but not frozen)
  2. cut chicken into small pieces
  3. cut onions into tiny pieces
  4. (optional) cut capsicum into long pieces
  5. (optional) cut tomato into small pieces

Procedure

  1. put small amount of olive oil into big pot
  2. heat to 1300power / medium heat
  3. add all onions
  4. stir for 2 minutes
  5. add all chicken
  6. stir for 2 minutes
  7. add 3 tablespoons of hungarian paprika
  8. (optional) add capsicum
  9. add boiling water to cover all +2cm (roughly 4cups)
  10. add 2 chicken stock cubes
  11. partially cover with lid
  12. let it boil for 1h:30 at power 800 (medium)
  13. once cooked, add roughly ~300ml of thickened cream
  14. stir for 2 minutes
