How to prepare Sambal
Ingredients for 1 large bowl
- 2x red onion
- 2x whole garlic
- 2x tomato
- 3x big red chilies
- 10x+ birdseye small chilies
- 50g shrimp paste
Preparation
- Clean roots from chilies
- Peel onions
- Peel garlic
- Wash everything well under flowing water
- Chop garlic into rough small pieces
- Chop onion into small pieces
- Chop all chilies into 1cm rounds
- Chop tomato roughly
Procedure
- Set frying pan to high heat
- Add moderately lot of oil
- Fry all garlic first
- 2 minutes later, add all ed onion
- 1 minute later, add all shrimp paste
- 1 minute later, add all chilies
- 1 minute later, add all tomatoes
- next 3 minutes, let simmer on high heat and mix occasionally
- pour pan content into large bowl and back to pan through stainer to filter out oil
- cover bowl with plastic bag to mitigate chili fumes and projections
- mix with blender ~20 to 30 times in bursts
- pour bowl content back into frying pan on 6/6 heat
- mix gently, cover with mesh to avoid projections
- 3 minutes later, reduce heat
- keep on fire, stirring occasionally until a nice red color develops
- ~12 minutes later, taste and add salt if necessary
Tips
- If freezing, put in plastic containers.
