Thai sticky rice with mango
Ingredients
- 1 cup of glutinous rice
- 1.5 cups of water
- 4-5 tablespoons of brown sugar
- 1 can coconut milk
- 1/4 teaspoon salt
- 1 to 2 ripe mangos
Preparation
- soak 1 cup of glutinous rice with 1 cup of water for 20-30 minutes
Procedure
- add 1/2 cup of water, 1/2 can coconut milk, salt, 1 tablespoon brown sugar
- stir
- bring to gentle boil, partly cover with lid, reduce heat to medium low - gentle simmer
- simmer for 20-30 minutes until water is absorbed
- turn off and close lid, sit for 5-10 minutes
- warm rest of coconut milk (no boil) ~5 minutes, add brown sugar if required
- cut mangoes into cubes
